Staying healthy while on a road trip can be hard. There's so much temptation to pick up a bag of chips at a petrol station, or cruise through a drive thru when it's late and you can't be bothered finding a supermarket. But it's actually super easy to make quick and healthy meals if you know what to do. I've created this recipe for Healthy Buddha Bowls because I wanted something filling, delicious, and easy. All of the ingredients can be found in any supermarket, or swapped out for things you like better. I made this in the JUCY Casa Plus kitchen, which is awesome because it has an oven to roast the kumara, but if you don't have access to an oven you can easily microwave your vege at a campsite kitchen.
